Classical to Fusion Cuisine
Within the confines of our kitchens we have a tightly-kept secret and he has a name – Mr. Ralston Williams, Jolly Beach Resort’s Executive Chef (EC). EC Ralston has been in this business for well over 34 years. Antiguan-born, he was raised in the UK where he obtained his degree from Oxford.
He’s the man in charge of Jolly Beach Resort’s 5 on-site restaurants, a bouquet of Italian, Indian, and Seafood a la carte restaurants, grilled catch of the day, grab-and-go beach fare, buffet smorgasbord, and even afternoon high tea.
EC Ralston told us that when he was an up-and-coming chef, things had a certain order. He refers to that style of cooking as “classical.” “There was a reason for certain ingredients, spices, and herbs to be used in certain dishes,” he says. “Today, cooking styles have shifted from classical to fusion, and I’ve adapted. It’s all about making people happy.”
Here’s another kitchen secret: EC Ralston is considered the resort’s “Culinary Cupid.” Why? Aside from baking, his passion is to make up menus for couples. Jolly Beach Resort & Spa hosts innumerable couples, and whether it’s for a couple who is celebrating an anniversary, a couple who has gotten married at the resort, a honeymooning couple, or simply a couple wishing to have an intimate dinner for two – this is where EC Ralston goes all out. Your summer dining choices are as delicious and varied as ever, we’re just doing a little sprucing up which means new seating arrangements that we want to share.
Lydia’s will be briefly closed for renovations through June 21, 2013, but you will still enjoy its complete Antiguan-inspired menu. You’ll be seated alfresco on the patio and lawn of Bocciolo’s restaurant to dine on local favorites like Hot Gingered Prawns and Flying Fish Fillet.
Beginning on June 22nd, à la carte dinner service will begin at Hemispheres from Monday to Wednesday, Fridays and Saturdays. The popular Carvery Buffet will continue on Sunday nights as well as the finger lickin’ Barbeque Buffet on Thursday evenings. Please note that all à la carte dining is by reservation and our Concierge Services Desk is happy to make all of your arrangements.
The full breakfast and lunch buffets at Hemisphere’s remain unchanged, as does you’re à la carte dinner options at Bocciolo’s and Utsav. Don’t forget the Splash Grill for grab-and-go burgers, fries, chicken and more when you just want to stay on the beach.

The newest addition to our 2013 “Get Into the Beach of It” program launches this Saturday morning at 7:00 a.m. Yes, it’s early but its breakfast, our new “Healthy Choice” continental breakfast option that will be served in the Utsav Restaurant.
The buffet-style “Healthy Choice” will be served daily from 7:00 a.m. through 11:00 a.m. for our guests who prefer lighter, and later, fare. The well-rounded menu includes an assortment of seasonal fresh fruits and juices, fruit and plain yogurt and a choice of three cereal varieties. A deli platter features a selection cold cuts and cheese. Varieties of breads baked daily here by our staff include whole wheat and white loaves, plaited Antiguan bread, sweet currant buns and croissants. Banana bread, muffins, scones, cinnamon rolls, tea cakes and Danish round out the menu and of course our delicious coffee and a selection of teas will be served.
Our new “Healthy Choice” continental breakfast is in addition to the full Hemispheres Breakfast Buffet served daily from 7:00 a.m. through 10:00 a.m. The menu at Hemispheres includes “Healthy Choice” options as well as made-to-order eggs and omelets, sausages, bacon and more.
The “Get Into the Beach of It” program launched in January and is focused on giving our guests even more fun fitness and healthy lifestyle choices while vacationing and includes our first Insane Beach Body Boot Camp, April 25-29. April is Health and Fitness Month and we encourage you to start your even healthier habits today. Why wait?

At Jolly Beach Resort & Spa we’re all about casual fun-in-the-sun, a relaxed beach getaway. But even the most laid back of our guests appreciate a fine dining experience and our Ristorante Bocciolo delivers. It’s not unusual to see a bride and groom toasting their nuptials, or anniversary and birthday celebrations at dinner.
The Food. The menu is Italian inspired with a dollop of Antiguan flavor. You start with a savory and abundant antipasti bar of grilled marinated vegetables, cured meats, mozzarella and tomato with basil pesto, an olive medley, crispy squid, rosemary and parmesan polenta chips, and butterbeans with sundried tomato and fried sage leaves. First course choices include prawn linguini, ricotta ravioli, risotto with Italian sausage and angel hair with scallops. Have some pizza topped with three cheeses and roast vegetables, smoky bacon and pepperoni or a medley of olives, mushrooms, artichoke hearts and anchovies. Then, for your main course the menu includes veal osso buco, grilled chicken served with a tomato, olive, chili and caper compote, baked fresh-caught fish with mussels and clams, and pork chop in Marsala sauce.
The Fun. And at Jolly Beach you know that fine dining doesn’t equal boring. Maître d’ Bradley Meade and his staff execute synchronized service, an elegant technique used in five-star restaurants. What does all the time spent training and drilling the staff mean to our diners? Showtime! As each course is served, one waitperson per guest circles your table. The lead waiter signals and voilà, all the plates are set on the table simultaneously; an efficient and fun performance at every course.
Bocciolo also stands out as our à la carte restaurant with a dress code. Think casual elegance, trousers and collared shirts for gentlemen and no sandals, slippers, sneakers or jeans. And not to worry, it’s air-conditioned.
